Does anyone have a recipe for mondazi(sp)? A bread commonly served in some areas of Africa?

My fiance goes to Africa several times a year for missions and every time he comes back he raves about this bread called "mondazi". He describes it as slightly sweet and lightly fried and he said they usually serve it during afternoon tea or just for a light snack. I can't find a recipe anywhere!

1 ¼ cup flour


2 Tbsp. Sugar


1 teaspoon baking powder


1 teaspoon ground cardamom


Pinch of salt


1 egg


¼ cup milk ( you may need more0


Oil for frying





Mix together dry ingredients and mix in egg and milk until well mixed. Roll out as for a jellyroll to about ¾" thickness. Cut using a doughnut cutter with center ring removed or a glass turned upside down. Fry in hot (365ºF) oil until golden brown. Makes about 1 dozen

4 cup flour


1/2 cup sugar


1/2 tsp baking soda


1 tbl active dry yeast


1 1/2 cup water


4 tbl vegetable oil





Combine dry ingredients in mixing bowl. Pour water and oil into center of flour mixture. Mix thoroughly.


Knead dough 15-20 minutes. Divide into 6 large balls. Roll each ball out into circles. Cut each circle into 4 triangles. Deep fry until brown
