How do you make chicken quesadillas (sp)? what else do you serve with it besides salsa?

I have some left over grilled chicken breast I wanted to use. On the side, would you just serve salsa,shreddedlettuce, andsour cream and this be a complete meal?

it's best if you have a griddle or a flat surface to cook them on. get all your stuff and put it in the tortilla, spread it out pretty thin and fold it. if you have a griddle or a quesadilla maker, you can use that and use two tortillas, but the kind you usually get a mexican restaurant are folded. i would suggest you put butter on the outside. i sometimes put a splattering of salsa inside, and usually add sour cream and guacamole (if i have it). if folded, they can be kind of messy, but i like it that way - it's like a grilled taco.





if you cook it on the stove, turn it up to about medium heat or below and turn every two or three minutes until the outsides are golden.

Reply:I say your missing a side dish. Try spanish rice. Here is my recipe.





garlic chopped fine


1 cup of rice


tomato sauce


chopped onion


tomato


chicken broth


2 tblspns of oil





brown rice and garlic in oil over medium heat


instead of water use chicken broth(2 cups)


add onions and chopped tomato to liquid


bring to a boil and reduce heat to simmer.





cook until liquid is absorbed.





goes great with your quesadillas

Reply:Not to sure you're talking about quesadilla's..A quesadilla(I'm not sure of the spelling either) is made like a sandwich between two tortillas.....sounds to me, with your ingredients that you could make some really good soft tacos....just roll everything into a tortilla and enjoy.


If you are talking about quesadillas..try it with cheese, roasted red peppers, fresh mango, cilantro, a diced jalapeno pepper and chicken all grilled together...delicious

Reply:Each one of these can feed one person...two if neither of you have a large appetite. You can make these without the chicken, but they're not quite as filling that way. As with other quesadillas, you can have guacamole, sour cream, or salsa on the side.





This recipe makes one quesadilla. Instead of the two different cheeses, you can substitute in 2/3 cup of the Mexican Blend cheese that you may find in your supermarket. Making a double recipe of these is nice because you can use one full tomato and not have any leftovers.





2 10-inch tortillas (the big kind, usually called "burrito sized")


1/3 cup Monterey jack cheese, shredded


1/3 cup Cheddar Cheese, shredded


1/2 medium tomato, chopped


2 tsp diced onion


1 tsp diced jalapeno peppers


1/2 chicken breast, cut into long thin strips


1/4 tsp. cilantro


Before you start on the quesadilla, slice up the chicken breast into long thin strips, and cook them until there's no pink remaining in the center of the strip.


Melt some butter (a tablespoon or two) in a large frying pan, or wok if you're fancy. Place one of the tortillas in the pan, and spread the cheese in the center of the tortilla, leaving an inch or so uncovered. Over the cheese spread the tomato, onion, peppers, and the chicken strips as well. Sprinkle the cilantro (and any salt, pepper or other seasonings you would like) on the chicken. Place the second tortilla over the quesadilla. Brown the bottom tortilla for 1-1.5 minutes.





Now comes the fun part: flipping the quesadilla over without losing the contents. If your pan is large enough, or if you're using a wok, it shouldn't be too much of a problem. With the small pan that I have, though, I cheat. I take the quesadilla out of the pan, and place it on a plate. Then just bring the plate over the pan, and flip the plate over. Tah-dah!





Once you've done that, brown the bottom tortilla for another minute or so. Once it's cooked, take it out of the pan and slice it up into six or eight pieces. Serve it with any side dishes of your choice i suggest spanih rice or refried beans
Reply:Hi, well, to make a real chicken quesadilla you can cook your chicken with some tomatoe sauce, then chop some onions and mix everything, you can add if you want a chile or 2, you can serve it that as well alone or beside the salsa you can serve it with a portion of smash potatoes. When I cook I really don't use shredded lettuce, I hate it unless I'm making chicken tacos. With chicken tacos I usually do the same as you, just fry the chicken breast same as the tortilla (just a little) use the shredded lettuce and pour some sour cream on them. I like soup with those tacos, a pasta soup. Take care.





By the way, 2 tortillas and your cooking mix between is call "sincronizada" and is not made with all that, just 2 tortillas and between you use ham and cheese.

Take 2 tortillas. Throw one on a pan over low heat. Add some shredded cheese and scallions (and bacon, or chicken, or anything else you like). Cover with the other tortilla. Cook for a few minutes, and voila.





Serve with guacamole and sour cream. Refried beans can go well with it too.
Reply:I mix the chicken with some ro-tel, shredded cheese, a little cream of chicken soup, and seasonings of choice. Brush 2 tortillas with olive oil or spray with Pam, and sprinkle chili powder on it, and brown for a few minutes in a pan. Lay one tortilla on a baking sheet, spread chicken mixture, then extra cheese, lay other tortilla on top, and smoosh (hey that's chef terminology hehe), and place in 350 oven until cheese melted, about 5 minutes. Smoosh the tortilla again to make sure it sticks together.





I like baking them because it "stiffens" up the tortilla, making them easier to handle.

1/4 cup mayonnaise


2 teaspoons diced canned jalapeno peppers


2 teaspoons juice from canned jalapeno peppers


1/2 teaspoon ground cumin


3/4 teaspoon sugar


1/2 teaspoon paprika


1/8 teaspoon cayenne pepper


1/8 teaspoon garlic powder


dash salt





DIRECTIONS:


In a blender or food processor, mix together the mayonnaise, diced jalapenos, jalapeno juice, cumin, sugar, paprika, cayenne pepper, and garlic powder. Blend until smooth and jalapeno is completely pureed, about 1 minute. Season to taste with salt, as needed.
